Nicole's parents were actors who met on the set of Bonanza. As a small child, her younger brother would mispronounce Nicole's name, saying "Cole Cole" or "Co co" in place of "Nicole". Eventually family and friends also began addressing Nicole as Coco. The family moved to Albuquerque, New Mexico when she was 10. She grew up as a tomboy, with her father she rode quads and played football, doing everything boys do.

Once becoming an adult, Coco began specializing in swimsuit and Lingerie modeling, calendars, catalogs and videos. At 18, she won the 1998 Miss Ujena contest in Mexico. Although Coco states she always had nice sized breasts and buttocks, she wanted them to better fit her shape, so she enhanced her breasts to '39 DD' and soon after went into nude modeling. In 1999, she married Mike Williams, but they divorced in 2003.
In 2001, Coco was employed for six months by Playboy, working their events and parties at the Playboy Mansion. She also appeared in low-budget R-rated films such as Southwest Babes, released in 2001, Desert Rose (2002), Angel Blade (2002) and The Dirty Monks (2004).
